Pumpkin Pancakes.


Are you tired of pancakes yet?  Me either.

Tonight was breakfast for dinner night, and on this crisp Fall evening, they really hit the spot.

Pumpkin Pancakes
{from allrecipes}

2 cups flour
3 Tbsp brown sugar
2 tsp baking powder
1 tsp baking soda
1 tsp allspice *
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp salt
1 1/2 cups milk
1 cup pumpkin puree
1 egg
2 Tbsp oil
2 Tbsp vinegar

Mix together all dry ingredients and set aside.  In a separate bowl, mix together the milk, pumpkin, egg, oil and water.  Add dry mixture to the pumpkin mixture, and stir just until combined.  Pour onto hot griddle, using 1/4 cup of batter per pancake.

::  kitchen notes  ::
* i didn't have allspice, so i made my own with a mixture of equal parts cinnamon, nutmeg and cloves.
remember not to over mix, for fluffy pancakes
if you're feeling a bit crazy, sprinkle some mini chocolate chips on top

This is my favorite pumpkin pancake recipe! The only problem is the thickness of the batter...but I won't let that keep me from indulging. I'm thinking about making these as a treat for my husband on Saturday morning!

You're right, it was a pretty thick batter, but I didn't mind. It was definitely worth it for these yummy pancakes!
