Best Buttermilk Pancakes.

It's Saturday morning.  At my house, that usually means pancakes.  The boys are not too picky, they are happy with good old Bisquick or Krusteaz.  Hannah and I prefer homemade pancakes, but until a few months ago, I had yet to find a recipe that we loved.

Then I saw Martha Stewart's recipe.  And it was all over.  These pancakes are melt in your mouth, yum!  Maybe I'm the last person to find out about this recipe, but I thought I'd pass it along anyway.

Martha Stewart's Best Buttermilk Pancakes

*the key to fluffy pancakes is not to over mix the batter*
 *it should not be beaten smooth*

2 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3 Tbsp sugar
2 large eggs, lightly beaten
3 cups buttermilk
4 Tbsp melted butter, plus 1Tbsp for griddle

Heat griddle to 375 degrees.  Whisk together flour, baking powder, baking soda, salt and sugar in a large bowl.  Add eggs, buttermilk and 4 Tbsp of melted butter; whisk to combine.  Batter should have small to medium sized lumps.  DO NOT OVER MIX.

Grease griddle with 1 Tbsp butter.  Pour about 1/3 cup batter into pools 2 inches away from another.  When pancakes have bubbles on top and are slightly dry around edges, flip over.  Cook until golden on bottom.

i generally don't buy buttermilk, but it is worth it to have the real stuff on hand for these pancakes.  i've tried them with sour milk (1 Tbsp lemon juice + enough milk to make 1 cup) and they're ok.  but they taste so much better with real buttermilk.

I love buttermilk pancakes- they always remind me of when mom would make them when we were camping. Her recipes is just a little different than this one, so I'll have to give this a try.

Its a rare occassion when I buy buttermilk, but when I do, I get to make some of my favorite things all at once- buttermilk pancakes, buttermilk syrup, and my most favorite- texas sheet cake!

Every Saturday, Spencer makes the best buttermilk waffles ever! Spencer grew up on them and buttermilk pancakes. I was lucky if I had cereal. His tradition of waffles on Saturday is one we all look forward to. But... we just might have to start a new tradition with this recipe. YUM!

how ironic! i was just searching for a good buttermilk pancake recipe last week, but i couldn't really find one.
we have breakfast for dinner every thursday night, so i have been wanting to try new recipes. thank you!

Have you ever tried the powder buttermilk? I use it for my banana bread and wonder if it would work for this recipe too? I'll be brave and try and let you know!

I never have, but our cousin was just telling us that it's all she uses when a recipe calls for buttermilk. I'm sure it would be delicious! I'm excited to hear how it turne out!

I was a bit sceptical but I must say you have totally convinced me to always have (at least) 3 cups of buttermilk on hand!
