Frosted Banana Bars.


Recipe from: old 1st Ward cookbook

::  I'm sorry these posts only have a final result photo.  I've been a bit sick, and didn't really feel up to taking the time for a step by step post.  Next time! ::

Looking for another way to use up those brown bananas?  Think soft and yummy.  Think Cream Cheese Frosting.  Think no more.  I've had this recipe for years, but only just made it a few months ago.  Oh, what I was missing out on!

Frosted Banana Bars

1/2 cup softened butter
2 cups sugar
3 eggs
3 mashed ripe bananas
1 tsp vanilla
2 cups flour
1 tsp baking soda
pinch of salt (1/2 tsp...ish)

Cream butter and sugar, add eggs, bananas and vanilla.  Mix in the dry ingredients.  Pour into greased 1/2 sheet pan (you can use a large cookie sheet or a jelly roll pan.  i like the sheet pan best)  Bake @ 350 for 25-28 minutes.  Cool

Frosting:
1/3 cup softened butter
1 8 oz. package softened cream cheese
4 cups powdered sugar
2 tsp vanilla

Cream butter and cream cheese.  Add powdered sugar and vanilla.  Mix well.

Spread over cooled bars.

:: Kitchen Note ::
These bars taste absolutely divine straight out of the freezer.  Sounds strange, but don't doubt.

Just made these for FHE on Monday night. They were a big hit & we've been drooling over them. My hubby wants me to make them again & try peanut butter frosting. I'm not sure on that one, but it's something to try at some point. Thanks for the recipe!

When you say they are good right out of the freezer, do you frost them before you freeze them or after?
I am looking for things I can freeze individually for school lunches.

Yes, definitely frost them before you freeze them. I freeze them, and then slice them. It it so much easier and it makes a clean cut every time. These would be perfect for kids lunches, Kim!

Thanks!!! I have some bananas right now that I am waiting to get super ripe . They are taking forever. I am sure the fact that I am craving these as nothing to do with them not being ready yet. :)

If you're getting impatient for those bananas to turn brown, pop 'em in the fridge or freezer. For whatever reason, the cold seems to turn them brown in a heartbeat!
