Cookies on Crack.


Also known as Congo Bars.  But holy cats, these things are so dang tasty, you'll wonder what drug somebody slipped in them, because let me tell you...they are addictive.  As in, you're completely hooked, can't think of anything else, will practically kill for another bite, addictive.  Okay, maybe that's taking it a bit far, but you get the idea. 

So consider yourself warned.  Bake at your own risk.

Congo Bars
{adapted from recipe found here}

2 1/2 cups flour
2 1/2 tsp baking powder
1/2 tsp salt
2/3 cup softened butter (11 Tbsp)
3 eggs (room temperature)
2 1/4 cups dark brown sugar
1 tsp vanilla
1-12 oz. package chocolate chips
1 cup chopped nuts, optional  ( i don't use them)

Preheat oven to 375 degrees

Mix dry ingredients and set aside

Cream brown sugar and butter.  Add eggs, one at a time, making sure one is incorporated before adding another.  Add vanilla and beat until mixture is smooth and no lumps of sugar remain.

Add dry ingredients and mix just until combined.  Add chocolate chips.

Spray a jelly roll pan with Pam.  Spread dough evenly and bake for 18-22 minutes or until golden brown.  Remove pan from oven and place on cooling rack until cool enough to slice.

I am so going to make these tomorrow. I hope I am not to "strung out" to pick my kids up from school. lol

By the way, make sure you poke a fork or a toothpick in the middle before taking them out of the oven. Otherwise, you'll have some lovely cookie dough on crack bars... Been there, done that.

i made these last night and they were yummy. I only had half a bag og chocolate chips so I added half a bag of peanut butter chips too. Yummy. Thanks for the recipe.

these look so delicious. you better believe they'll be in the oven tonight. perhaps a snack for the GLEE premiere? :)
